In a Quandry

Well, Thanksgiving dinner has come and gone, successfully yet again. Before I get to any of the details, I have an important question:
At what point should I stop making pumpkin pies because they're not coming out even with the Cool Whip?
I made the first two pies prior to T-day and surprisingly, they stayed safe and sound in the refrigerator until after the big dinner. But the Cool Whip ran out before the two pies did and we had to open a new tub. But then the pies were gone and I had a partially-gone Cool Whip in the 'fridge*.

So I had to make two more pies.

But then the new Cool Whip ran out. And I had pie still to be eaten.

So I opened another Cool Whip.

You see where this is going?

*Maybe this is some sort of cosmic pay-back for not making fruit salad this year*

Okay, short version of the four-day feast. Mom didn't join us this year. I didn't cook the day before. Not because I only do it for Mom, but we didn't get the bird until Monday evening, so it wasn't thawed in time.

J2 joined us for dinner, which came out fine, just fine. I said we'd eat by 2:00, and we were eating by 2:05.

21 pound turkey. One guest (for 2 hours), the two of us. All leftovers gone by Sunday evening. Mr. W. actually boiled down/cooked the carcass afterward, we got 5 quarts of yummy goodness. 2 quarts have already been used for two meals and leftovers. Did you notice? Today is TUESDAY. We do like our turkey!

New recipes this year: Stuffed Onions from Smitten Kitchen (one of my new favorite places to be online - ssshhhh! don't tell anyone, it will ruin my reputation!). I didn't use the official stuffing/dressing recipe (because my recipe ain't broke), but I did everything else according to the recipe. Definitely GOOD. Don't know if the recipe will make a return appearance - it was a bit more involved than my usual cooking (snort).

Pumpkin Bread Pudding. What's not to love? Well, okay, I'm sure that I will most definitely love this next time I make it. At which time I'll actually follow (translate: BELIEVE) the recipe. Look for gushing review and notable weight gain at Christmas time.

Lastly, I made sweet potato fries. I looked high and low to find some sort of savory seasoning suggestions online, but got disgusted with all of the maple syrup slash brown sugar slash marshmallow recipes.

Sweet Potato Fries*
Oven at whatever temp (400?) it is when you've taken the turkey out. (heh)
Peel sweet potatoes, cut into french-fry-ish shapes (be careful and don't worry if they're not perfect). Put into a bowl and drizzle olive oil on them, stir them around with your hands so all 'fries' get lightly coated.
Put on a baking sheet in a single layer, season with black pepper and granulated garlic (not garlic salt, not powdered garlic!).
Bake about 30 minutes, turning once during that time.
*This is how I treat white potatoes during the rest of the year, by the way. The only difference is that I add salt to the white potatoes.

How's that for the short version? (sheesh)

We had a good one, too. I skipped the fruit salad, too, but I made acorn squash the way you used to (at least, how I remember it ;). Charles had never heard of acorn squash before! =]

I ate 3 whole acorn squash to myself =O

As for pies....I made over 3 dozen mini-pies (in muffin tins), and the kids each made a full-size pie. We still have an entire pie in the fridge. Oh, the small ones I took to work with me, as I worked the Wednesday before (and they were gone in less than an hour!). I made them from scratch, too! Back to your pie thing, though...you should do like I did, and make up the pie filling in a big bowl, and then just cook as needed. You can freeze the crust. If you needed one more pie, there's no reason you should have to make TWO =P
